Banana Extract

The word “banana” originates from the Arabic word “banan”, which literally means finger. Originating from Southeast Asia, it eventually spread to the Middle East, West Africa, Europe and the Americas. This subtropical fruit belongs to the genus Musa from the family Musaceae. Economically, it is the fifth agricultural food crop in terms of world trade, after coffee, cereals, sugar and cacao. It is an important fruit crop in the world apart from grapes, citrus fruits and apples. In Malaysia, bananas are the most produced fruit in 2017 and 32% of the nation’s banana production originates from Johor.

Depending to varieties and ripeness, banana flesh taste vary from starchy to sweet and the flesh color varied from white to yellow. While unripe, is firm, gummy with latex and turn to soft, dry when ripe. It is eaten raw and is often categorized as the dessert or as a staple food by cooking (frying, boiling, roasting or baking) and referred to as the plantain. Banana chips made by deep-frying thin slices of unripe fruits are also common. Banana pulp can be used as an ingredient in bakery items, drinks, dairy desserts, and many other processed foods.
